Overconsumption of high-carbohydrate foods can lead to serious liver problems, particularly non-alcoholic fatty liver disease (NAFLD).
Eating large amounts of refined carbohydrates—such as white rice, pastries, and sweets—is one of the most common causes of NAFLD. When these carbs are digested, blood sugar levels rise, prompting the body to produce more insulin. This can lead to insulin resistance, which promotes the accumulation of fat in the liver.
Insulin resistance may also increase triglyceride levels, resulting in more fatty acids being absorbed by the liver. Over time, this process contributes to the development of non-alcoholic fatty liver disease.
People with type 2 diabetes are especially advised to monitor liver health, as fatty liver is common among diabetics.
