Researchers note that anthocyanins influence key cellular pathways, including Nrf2 and NF-κB, helping the body combat oxidative stress — a major cause of fatigue, inflammation, and tissue damage following intense workouts. People who regularly consume anthocyanin-rich foods tend to adapt better to physical stress and show greater resilience to chronic diseases.
However, only about 2% of anthocyanins from food are actually absorbed by cells. Scientists are working to improve their bioavailability through microencapsulation and nanoemulsion technologies, and they recommend combining purple foods with vitamin C, which enhances absorption.
The study’s authors emphasize that regularly including purple vegetables and berries in your diet can be a simple, natural way to strengthen health, boost endurance, and slow down aging.
